Featuring the celebrity chef proprietor, lucky viewers are treated to high-resolution tutorials, straight from Belfast’s historic St. George’s Market.
Established in 2019, Stock Kitchen has joined leading market traders, local suppliers and independent craftsmen as the latest business to call St. George’s Market ‘home’. The kitchen and restaurant is currently overseen by celebrity chef Danny Millar, who returned to his native Belfast in the 1990s, leading restaurants including Shanks, The Narrows, Cayenne and Balloo House as Head Chef and Director.
Leading such restaurants catapulted Danny Millar to national prominence, secured by a raft of top awards including the Michelin Guide, the Bridgestone 100 Best Restaurants in Ireland and Georgina Campbell’s ‘Best of the Best’ in Ireland Guide. Indeed, many visitors recognise Miller as a household name after making regular appearances on BBC One’s Saturday Kitchen and the Great British Menu.
Since its launch, Stock Kitchen has been praised by critics and food-lovers alike. Indeed, The Belfast Telegraph’s Joris Minne described the restaurant as “different, more robust, rustic and thankfully, informed by the market in which it sits”, with local suppliers offering some of the most sought-after ingredients available on the island of Ireland. Followers of Amazing Food & Drink were recently treated to a masterclass from Danny Millar, who led some handy video tutorials for fans of Irish wheaten bread and fish casserole.

A symbol of Irish baking and a mainstay in supermarkets and bakeries across the island, wheaten bread is the definition of an Irish classic and a personal favourite of chef Danny Millar. Made with Franciscan Well stout, Danny’s recipe has emerged as a local favourite. Made using the stout for added flavour complexity, the recipe also contains treacle and mustard.

It is therefore apt that chef Danny Millar takes us through the cooking of Stock Kitchen favourite, fish casserole. We follow Millar through the stalls of St. George’s market as he handpicks the freshest fish for his kitchen creations.
