Jack Monroe Lockdown Larder 'Get Radical with Cans'

She is a food blogger who made her name with affordable, resourceful recipes loved by millions, but even as a best-selling author, Jack Monroe is still an advocate for canned foods from British staples to unusual tinned ingredients.

 

“I still fill my shopping trolley with tins. I’ve got an embarrassing amount of tinned tomatoes in my home,” said Jack Monroe to Eamon Holmes when she appeared on This Morning earlier this year.

 

“Tinned foods are a staple for almost every family in the land. We have a long-lasting love affair with canned tomatoes, baked beans and soups, but it’s about time we started utilising the full range of canned ingredients we have access to in the supermarkets.”

 

Jack, who has recently joined forces with Canned Food UK to provide six exclusive recipes, advocates that more people should be utilising the convenience of canned foods and not just stretching for tinned tomatoes and baked beans, but trying unusual ingredients in non-traditional combinations.

 

“Through these recipes for Canned Food UK, I wanted to introduce all my readers to the wonders of all the different varieties of canned foods – stewed steak and mango to crab meat and black beans.”

 

Canned Food UK has launched its new #CannyJack campaign with six exclusive recipes from Jack Monroe including carrot cake drop scones which uses canned carrots and mandarin segments.

 

Also steak, mango and black bean curry using no less than five tinned ingredients including canned mango or peaches, black beans, stewed steak, tomatoes and coconut milk.

 



The remaining four recipes include Gigantes Plaki, a traditional Greek dish, using canned butter beans and tinned tomatoes; crab chowder mac and cheese (canned sweetcorn, tinned crab plus canned potatoes); Sicilian style fish stew (canned chickpeas, carrots, potatoes, tomatoes and sardines); and creamy brown lentil daal (brown lentils, tomato puree and coconut milk).

 

A study of 2,000 adults, conducted by One Poll, found that the average household has 16 cans of food in their cupboard and relies on tinned food for at least three meals a week. One in four will use canned items once a week for breakfast. 

 

Baked beans were named the most popular canned food in everyday cooking, followed unsurprisingly, by tinned tomatoes, soup, fish and vegetables. Yet, tinned fruit, hot dogs, ravioli and even new potatoes were popular choices.

 

“Canned foods are an excellent source of nutrition, convenient (who has time for peeling?) and have a long shelf life. Tinned tomatoes contain more lycopene, a cancer fighting agent, than their fresh counterparts. Tinned sardines contain almost an entire day’s recommended intake of vitamins D and B12. Sweetcorn, mushy peas, beans and lentils are all basic staples that can be thrown together at a moment’s notice,” adds Jack.  

 



In 2019, Jack launched her fourth recipe book, Tin Can Cook, packed with ambitious yet entry-level recipes designed for everyone. 

 

“There’s a whole raft of interesting tinned ingredients which we should be experimenting with! The Tin Can Cook is one who can open their cupboard and create a meal from its contents on any given day, whatever they may have,” comments Jack.

 

Jack’s exclusive recipes for Canned Food UK will be available over the upcoming months on the Canned Food UK website (cannedfood.co.uk) as part of its regular ‘Recipe of the Month’ feature, currently the creamy brown lentil daal features as this month’s recipe. 

 

Foodies can also enter monthly competitions on Canned Food UK’s social media pages to win a signed copy of Tin Can Cook.
